The restaurant at GF Victoria hotel, led by Jesús Camacho, will present its philosophy and culinary proposal at the world’s most influential gastronomic summit.
Donaire restaurant, located at the GF Victoria hotel in Costa Adeje, will take centre stage in the main auditorium of Madrid Fusión on January 27. There, its team, led by head chef Jesús Camacho, will present the philosophy and gastronomic proposal that have positioned Donaire as a benchmark for haute cuisine in the Canary Islands.
Participation in the main auditorium will be the cornerstone of Donaire’s presence at the fair.
Jesús Camacho will explain the distinctive concept that defines the restaurant: bringing pastry techniques into the savoury world, turning Donaire into a true author-driven kitchen built from a pastry chef’s perspective. This uncommon identity is also reflected in the team’s composition, made up of six professionals—five pastry chefs and one cook.

In this way, under the leadership of Jesús Camacho, Donaire has established itself as a creative laboratory where pastry-making structures the entire kitchen, exploring textures, combinations and techniques through a transversal approach. This meticulous discipline—where every gram matters and every gesture is essential—translates into creativity, balance and a refined, surprising gastronomic proposal.
Guided by this philosophy, Donaire works with ingredients by applying techniques from high-level pastry-making to savoury cuisine, bringing precision, accuracy and absolute control to the creative process. Conversely, in the sweet section, products and approaches traditionally associated with savoury cooking are incorporated, deliberately breaking down the classic boundaries between sweet and savoury.
Donaire will be present at Aula Makro and the Tenerife Tourism stand
In addition to its appearance in the main auditorium, Donaire will also take part in Aula Makro and at the Turismo de Tenerife stand, concentrating all its activity at Madrid Fusión into an intense day that reinforces its role within one of the world’s most important culinary congresses.
Now in its 24th edition, Madrid Fusión—widely regarded as the most influential gastronomic summit in the world—will bring together more than 25,000 professionals, around 2,000 congress attendees, as well as leading chefs, sommeliers, researchers, journalists and key figures from the gastronomic industry.
Donaire’s presence at Madrid Fusión is backed by a trajectory recognised by the country’s leading gastronomic awards, including a MICHELIN star and a Repsol Sun.
