Jesús was recognized for his Best Pastry Work at the Diario de Avisos Gastronomy Awards 2020. He also stands out for his creative use of local products in his pastries.
For example, the Natura dessert incorporates avocado from La Gomera, our neighboring island. We love these avocados for their creaminess and intense flavor. On the other hand, Montblanc uses the famous banana from the Canary Islands. It demonstrates how local ingredients can be transformed into new and unique creations.

Beetroot – Reinvented Canarian Sea Bass
This is one of our most innovative main acts. Although cured sea bass might seem the main element, we have decided to give prominence to a humbler ingredient: beetroot. This vegetable, carefully prepared in a sweet and sour male vinegar, becomes the dish’s star.
The sea bass from Aquanaria, a sustainable fish farm on our coasts, is a perfect example of how we use high-quality local products. In this way, it plays an irreplaceable role in the dish as a whole.
Its presence brings a distinctive texture and exceptional quality to the whole. In short, this dish exemplifies our philosophy of reinterpreting local products, creating combinations that enhance local flavors.
Appetizers with OleoTeide
We offer delicious bread as an appetizer. The quality of our bread identifies us, as it is the first thing you will notice when you arrive at our restaurant. We work with José Fuentes, a talented artisan baker who makes our two varieties of bread: sourdough, curry, and dates.
As a final touch, we serve it with some OleoTeide, extra virgin olive oil made with the Arbequina, Arbosana, Koroneiki, and Picual olive varieties.
